Pesto isn't just for summer! This Lemon Basil Pesto combines bright citrus with the aromatic punch of basil to add fresh flavor to your winter meals. Toss it with pasta, spread it on sandwiches, or swirl it into soups for an instant flavor boost.
Ingredients
2 cups fresh basil leaves (packed)
1/4 cup fresh parsley (optional, for added depth)
Zest of 1 lemon
Juice of 1/2 lemon
1/4 cup grated Parmesan cheese
1/4 cup toasted pine nuts or walnuts
1 clove garlic
1/3 cup olive oil (more as needed)
Salt and pepper to taste
Instructions
Prepare the Ingredients: Rinse and dry basil leaves. Toast the nuts lightly in a dry pan for extra flavor.
Blend the Pesto: In a food processor, combine basil, parsley, lemon zest, lemon juice, Parmesan, nuts, and garlic. Pulse until coarsely chopped.
Add Olive Oil: While the processor is running, slowly drizzle in olive oil until the mixture reaches your desired consistency.
